What are microgreens?
Microgreens are greens that are harvested just after the cotyledon stage, where the plant still has many of the nutrients it would use for growth, and some are harvested with the first true leaves. Microgreens are used to boost nutrition as well as add flavor and texture to any meal. Microgreens are very nutrient-dense and can have up to 40 times the vitamins and antioxidants of their full-grown counterparts. Many microgreens like broccoli have been shown to help prevent cancer and other diseases. Eating microgreens can help improve your overall health by increasing your levels of vitamins, minerals, and antioxidants to protect your body from free radical damage and toxins. Eating foods with high nutrients can help your body do its job better and heal so you can feel your best.
Microgreens should most often be eaten raw because they are delicate and cooking can greatly reduce the nutrients contained in the microgreens. Enjoy them in sandwiches, salads, and smoothies as well as on top of hot dishes.

About Nourishing Earth Farm
My name is Marietta Gordon and I own and operate Nourishing Earth Farm. We are located in Robbinsville, NJ so all our produce is grown and harvested locally. Everything we grow is fresh when you receive it because it isn't traveling great distances to reach you.
Nourishing Earth Farm was started to help provide an easy way to access healthy food for our community in a world where we are all struggling to eat healthily. We believe that soil health is extremely important when it comes to healthy vegetables and greens containing all the important nutrients we need. This is why I grow my microgreens in soil instead of just coco coir or on grow mats. The same goes for the vegetables and salad greens I grow in the warmer months. Soil health is very important for these plants to be as nutritious as possible. How we grow is just as important as what we grow.
